I've had one of these sturdy baking stands for several years and use it regularly to prepare baked white and sweet potatoes. Whether I make one just for myself or several for others, it never fails to produce evenly cooked potatoes with little or no fuss. This stand is my hands-down choice over the folding plastic-spike stand design, which IMO is poorly made and totally inadequate for the task.
How I make microwave baked potatoes:
1. Choose medium-sized potatoes that are evenly shaped.
2. Before baking, rinse the skins and blot them dry. Use a fork to poke holes through the skin all around so internal moisture can escape.
3. Place the potatoes on the baking stand with the smaller end pointing towards the center; then place the stand on a revolving plate inside the microwave.
4. Depending on the potatoes' type and size, bake them at full power for 7-10 minutes. (You'll need to experiment to discover the best cooking times for your microwave.)
5. Remove the stand from the oven by its fold-down handle. Remove the (very hot) cooked potatoes with oven gloves.
6. Wrap each potato in a folded dishtowel for about five minutes to finish cooking.
7. Before unwrapping the potatoes, roll them on the counter to loosen their contents.
8. Unwrap the potatoes. Slice each one open length-wise with a sharp knife and fluff the contents with a fork before serving.
I just bought another stand for my mom. She loves it!
